Ingredients

  • 1 onion, diced
  • 3 to 4 cloves garlic, minced
  • 1 block tofu, crumbled
  • 1 jalapeno pepper, minced
  • 1 to 2 cups vegetables, chopped finely (green/red peppers, tomatoes, mushrooms, celery, anything)
  • 2 tablespoons curry powder
  • 2 tablespoons olive oil
  • 1 pinch salt and pepper

Directions

1) Saute onions in olive oil in a wok or frying pan, then add garlic and jalapeno pepper. Cook until the onions are translucent.
2) Add the tofu and cook it until it gets a little crispy.
3) Then add all the spices (you might need to add a splash of water to mix the curry all around)
4) Add all the vegetables and cook for five minutes
5) Serve hot on its own or with other yummy breakfast foods like roasted potatoes.
