Ingredients

  • ½ Cup pea shoots
  • assorted veggies
  • 1 Tablespoon vegetable oil
  • 2 garlic cloves, smashed
  • teaspoon crushed red pepper flakes
  • 1 pound firm tofu
  • soy sauce or tamari, to taste

Directions

Press tofu, til most of the water is drained. Chop tofu into 1/2 inch cubes, roughly. Heat a frying pan with oil. Toss tofu in. Fry tofu until mostly browned. Toss veggies in. Flavor with soy sauce or tamari to taste. Cook for about 8-10 minutes. Add smashed garlic cloves nd dried crushed red pepper flakes, then stir fry until garlic is pale golden. Toss in shoots and stir fry until wilted and tender, about 4 minutes.

Notes

Make brown rice or quinoa to serve also.
