Ingredients

  • Pesto Sauce:
  • 3 Cups basil, tightly packed
  • ¼ - ½ Cup pine nuts, toasted
  • 2-4 cloves garlic
  • ½ tsp. salt
  • ½ tsp. black pepper, fresh ground
  • ½ Cup Olive Oil
  • Toppings:
  • ½ Cup shallots, chopped
  • ½ tablespoon olive oil
  • 1 Cup baby spinach
  • 1-2 Cup vegan cheese, grated
  • Faux Feta Cheese

Directions

Preheat oven to 450F.

Place prepared pizza crust on baking sheet and set aside. To prepare sauce: in a food processor, blend together basil, pine nuts, garlic, salt, and pepper. Slowly add the olive oil, while blending, until well mixed. Set aside. In a large saucepan over medium heat, saute the shallots in oil until translucent and set aside. Spread the pesto sauce evenly over the pizza crust. Evenly add the spinach and shallots. Add a layer of "cheese" topped with faux feta "cheese". Bake for 10-12 minutes. Let cool 5 minutes before cutting and serving. The pesto sauce makes approximately 1 cup and it's enough for 1 pizza.
