Ingredients

  • 1 block soft tofu, drained
  • 1 packet onion soup/dip mix, Knorr vegetable soup mix
  • ½ cup vegan sour cream
  • 3 large cloves garlic, peeled
  • 1 package frozen, chpped spinach, thawed, drained and pressed into colander
  • 8 ounces sliced water chestnuts, from can and drained
  • ¼ cup scallions, chopped

Directions

1) Drain soft tofu and pat with paper towel.
2) Place garlic and water chestnuts into food processor and blend until just chopped.
3) Add tofu, onion mix, vegan sour cream and spinach to food processor and blend until smooth
4) Remove mixture from food processor and place in bowl.
5) Stir in chopped green onion.
6) Chill until time to serve (couple of hours at least, overnight OK too)
7) Garnish with pine nuts, cayenne pepper, more green onion

Serve with veggies, blue corn chips, bread, whatever...
